would anyone tell me if its possible to get the Thingy91 via Bluetooth or another wirelessly way to the Edge Impulse connected ?
so that i can collect with the board directly some data.
I would be super happy for some helpful information.

I think only the Thingy:53 supports wireless data collection by default with the nRF app.
I also invite you to have a look at this project from @mithundotdas: Pet Activity Tracker using XIAO BLE Sense & Edge Impulse - Hackster.io
Both boards share the nRF52840 SoC so you should be able to adapt it to remotely collect data using his app.

The Thingy:91 has an accelerometer so you can indeed use it to detect these patterns.
Feel free to have a look at this tutorial to learn how you can recognize movements from accelerometer data: Continuous motion recognition - Edge Impulse Documentation
