I’m thinking of using Edge Impulse Studio on a laptop to help me capture video for a training dataset. Is there a recommended hardware configuration for Edge Impulse Studio? What’s a minimum recommended configuration in terms of CPU, RAM, GPU and storage? Mac or PC?

There is no specific requirement to have a laptop for edge impulse, the ml algorithm is trained on our cloud infrastructure and then it gets deployed to run on an Edge device, you can even run your model or impulse on a mobile phone:
