is there an existing software capability on edge impulse to connect to a supported eval mcu platform that would allow ADC samples to be captured and stored to a file? i would like to create an CSV file in the long run to create a model for my analog sensor which needs to be picked out. the sensor will most likely be a current sensor. thanks for your feedback!

Yes indeed you can! Many of our Firmware supported boards with ADC have one such sensor included, e.g. the Pi PICO 2040 - Announcing Official Support for the Raspberry Pi Pico (RP2040)
