I’m currently making a project which requires a ton of image data (around 2gb)…so I was wondering if I would face any problem while uploading such a large dataset to the Edge Impulse studio ?

It will be fine. Your images have high resolution or you just have many of them? With Transfer Learning you normally need a few tens of images for each class.
Also if you are limited with your internet access, feel free to resize your images beforehand, the MobileNet model is optimized for 96x96 pixels images.
